Puttu


Ingredients

Raw Rice -1 cup
Jaggery -  3/4 cup
Water- 1/4 cup
Cardamom powder - 2 tsp
Grated cocunut - 5-6 tbs

Method

Preparation of flour
  • Soak the rice in water for 30 mins
  • Dry the rice after 30 mins
  • In a pan, dry fry the rice by adding rice in small amounts till it becomes golden brown in color.
  • Take a mixie and grind the rice to make a fine powder.
  • Heat 1/2 cup of water with a pinch of salt and tumeric, sprinkle on the rice flour 
  • When the water is sprinkled, till we get the required consistency, we should be able to hold shape of the flour. This is the correct consistency
  • Grease the idili plate with oil and keep this flour and cook.
  • Once cooked, the flour doesnt not stick to hands.
  • Sieve this flour or dry run in the mixie to break the lumps.
Preparation of syrup
  • Mix 3/4 cup of jaggery with 1/4 cup of water and boil well.
  • Once boiled well, the jaggery will roll well in water. At this stage switch off the stove.
Puttu
  • Add the prepared flour to the syrup along with cardamom powder, and fried cashews
  • Add 5-6 tbs of grated cocunut and mix well.
  • Puttu is ready
